LOL.....I know exactly where that is BRD.

Honestly, I love river carp but they have to be deep fried and under the 6 to 7 pound range when caught.

The secret to cooking them is in the preparation.......fillet them like any other fish, they are boney as hell, but if you take the fillets and cross cut through the fine bones they will disintegrate when deep fried.  Again.....over that 7# range the fillets get too thick and you can't fry the bones out.

I frequent a place in East St. Louis, Illinois......I think I am the only white guy that regularly dines there.  The owner is a one-armed black man that I have gotten to know real well over the years.  I call him in advance telling him what time I will be there and we dine together and have great conversation.  I know I am "protected" going in, and although not said, I am followed out of town to the interstate to make sure I get out of the neighborhood where his establishment is.

He knows my favorite plate and it is ready for me upon my arrival.......Fried carp, collared greens, boiled turnips with bacon, and cornbread.  We have been known to kill of a few bottles of grape wine and some wonderful racial discord conversation.  He refers to me as "The only white Irishman Brotha I know.".

Probably what he meant by 'cleaning' them.  I just know that almost every time we had fish after that my Dad would talk about those carp in Hennepin ;) ;) ;)

You go out of your way to eat in East St. Louis?  :o  Man, you've got some big stones in your middle pocket!  ???  No wonder you give them a head's up before going there and get an escort leaving!

I've always timed my trips through there on I-55 in the middle of the day. No freakin' way. If I got a flat I'd drive my rim and ruin it before I'd stop around there.

Ain't no piece of fish worth it, in my book. Dang!

In my youth, age 7 through 11, I lived there.  Yes, it has changed for the worse in socioeconomic terms but I have never felt threatened there......intimidated perhaps at times, but not threatened.

We bought a half a flat of Plant City strawberries at the fruit stand a few days ago.  My wife whipped up a couple of 'old fashioned' short cakes and we've been having strawberry shortcake way to regularly ;) ;) ;)

The berries aren't quite as good as Michigan berries in June but in April they're pretty darned good!!!

Oh Man that sounds good.....strawberry shortcake!

I think I am going to do a plate of Nacho Supreme and enjoy the tonight's championship game with a bottle of heartburn medicine.

Weather cooperated down here this weekend and grilled twice......BBQ chicken one night, steak the other.

It's going to be hard to beat last nights dinner. I put salmon filet on the grill and sautéed scallops and shrimp..Salad with lettuce and spinach from garden with Garlic Expressions

That is one of the few dishes Mrs. Fuzz can make without burning, and she makes it just the way I like it.  She made up a big pot of it for me on my last visit home and I pretty well killed off the entire pot within 4 days.

I spotted a slow cooker recipe the other day for pork tenderloin wrapped in bacon........that will be made after a few days of no fatty foods.
