Yeah, I'll be alright. Just should have gotten a flu shot at the start of cold and flu season.  My darn cousins kids got to me on Easter and now I'm sick and closing in on finals. :(

Finals are stressful anyway!!  My daughter has one more exam this Friday then she is finished with her first year of law school!! yahoo

did you make the patties yourself?  Do you have a good recipe?

Yeah, I make the patties.

I prefer left over charcoal grilled salmon. If that is not available I use canned salmon.

I can (14.5 oz) salmon
1 small white or yellow onion-diced
1/2 teaspoon pickle relish
1/2 teaspoon lemon juice
1 large egg
2 tablespoons mayonaise
1 cup bread crumbs or crushed 'ritz' style crackers
1/8 teaspoon white pepper
1/8 teaspoon cayenne pepper


Pick over the salmon, removing any skin, bones and discolored flesh. Combine all ingredients and form into burger sized patties.

Place patties in a cast iron skillet with enough olive oil to cover the bottom of the pan. Cook on medium heat approximately 3-5 minutes (or until the side browns nicely) turn and cook other side 3-5 minutes.

Serve with red potatoes, peas and white (bechamel) sauce.

Bechamel sauce...

i tablespoon butter
1 table spoon white flour
1 cup milk
dash nut meg

in a sauce pan on medium heat, add the butter until it melts. Add the flour and stir , incorporating into the butter. Cook on medium heat for about two minutes (you want to cook away the raw flavor of the flour) add the milk slowly to the roux (flour and butter mixture) and incorporate . Add nut meg. Continue cooking until the mixture starts to thicken. Serve over peas and potatoes.

(if you like garlic and have not tried them - TRY THEM..MMMMMMM)

Those Triscuits are soooo addictive!!  My parents brought a box of them to munch on in the car when I drove them To Kansas.  By the time we got into Iowa we had to stop at a store and buy some more :)    I like the, I think they are called Tomato/Basil?  ones too!

I will have to try the tomato/basil ones.  I want to try the rosemary ones too.
