Yup, as many veggies as possible.  Too bad I'm the only one who likes celary, unless I use it as the Trinity in Cajun food.

Seasonings?  Sort of a rub on the roast before browning it, then onion soup mix in the pot.

I put carrots, celery and onion in my crock pot this morning along with a chicken . . It's just about time to take the chicken out, debone it and put it back in along with some noodles :)

hmmm...sounds like what I am doing....homemade chicken noodle soup

Maybe in a weekend or so.. Chick Noodle soup

Took a roast, rinsed it and let it dry.  Put a rub on it (Paula Dean's recipe, not keen on it as it turn's out very salty, but in this case it's fine).


A big 'ol skillet with some olive oil.  Seared that rubbed roast, first the fat side then the narrow sides, finally the flat sides.


Put it in the slow cooker.


p.s.

Took some juices out of the slow cooker and put them in the skillet. Heated tit up and scaped the bottom, then returned the stuff to the pot.  Emeril calls them "Yum-Yum's"
