Potato,onion,and egg "stirfry" with apple pie for dessert. WHY didn't I buy that ice cream I walked by in the store today?

I've got an appointment in Toledo after work today, so I'm hoping my hubby is in the mood for Mexican food. I'm thinking El Camino Real (I think that's It). We tried that place for the first time this past summer and we were very pleased.

Last night we had a couple nice big roasting chickens, with smashed taters and beans with carrots.  Very good!  Only ate one of the chickens, though...  Making a HUGE pot of chicken noodle soup today.
