Unstuffed Cabbage

Do you like stuffed cabbage but hate the time & effort of rolling all those "meatballs"  he cabbage leaves?  Try this recipe - all the flavor without the work and to make it easier you can make it in a crockpot.  Was a hit a deer camp in November.

Unstuffed Cabbage

1 1/2 to 2 pounds ground beef or ground venison
1 tablespoon oil
1 large onion, chopped
1 clove garlic, minced
1 small cabbage, chopped
2 cans (14.5 ounces each) diced tomatoes
1 can (16 ounces) tomato sauce
1/2 cup water
1 teaspoon ground black pepper
1 teaspoon salt

Preparation:

In a large skillet, heat olive oil over medium heat. Add the ground beef and onion and cook, stirring, until ground meat is no longer pink and onion is tender.  Add the garlic and continue cooking for 1 minute. Drain the fat - if using venison burger no need to.

Add the chopped cabbage, tomatoes, tomato sauce, pepper, and salt. Bring to a boil. Cover and simmer for 20 to 30 minutes, or until cabbage is tender.  With 10 minutes to go add the rice.

Alternative is after frying up the meat and onion the whole recipe can be completed in a slow cooker 4 hours on low followed by 10 minutes on high when rice is added.

I have done a recipe very similar to this in the crock pot.......instead of the beef though, I used ground sausage.  It also called for rice so you have to go heavy on your liquid measurements as the rice will absorb.

Also....I just got a bag or two of shredded cabbage.  I tend to drink and party a lot while preparing foods so I try to mitigate the risk of losing a finger wherever possible.

Been watching Leivins and Dusseau haul loads and loads of cabbage down the road all fall. Cabbage Kings for sure....

I quit cultivating it.  A trip to Randy's cooler always nets a hamper of cabbage.

And those cabbage fields always have a nice smell around harvesting time.

Sausage would definitely kick it up a notch!  Also agree regarding liquid - I keep an eye on it when I stir a few times in the crockpot and add a little water if it looks dry.

Yea, that same reason is why I most times just use a one-hitter.   ;)
