Spinach Tortellini Soup

With Lent coming up I thought I would share this recipe that is perfect for Fridays.  For the non-Catholics there is a "with meat" option included that is really good as well.

Let me know how you like it.

Spinach Tortellini Soup

Fry till onion and garlic are tender:
2 tablespoons butter
6 – 8 cloves garlic
1 cup onion

Add and bring to a boil:
4 cups chicken broth
2 cups water

Add and cook for 10 minutes:
9 oz. cheese tortellini   (you can add more, just adjust chicken broth amount)
2 14.5 oz. cans petite diced tomatoes
10 oz. frozen chopped spinach (thawed)
8 – 10 basil leaves

Mix together, pour in soup while stirring vigorously, and cook for 3-5 minutes more:
1 egg
1/2 cup parmesan cheese

Add salt & pepper to taste then serve.

For a heartier version brown 1 pound Italian sausage, remove and drain.  Then add it back just before tasting for salt/pepper step.

Oh wow.....that looks good.

I had something similar last night for a supper soup......Tomato Florentine.
