now thats one thing a batter does not want to be called...is a sucker or a fish for that change up!!!

Its not a batter, but when I pan fry fish in butter, I mix half parmesan and half flour, some salt and pepper.  Its light.

GOLDEN FISH FRY BATTER

Batter ingredients
1 cup flour
1 12oz can beer
salt/pepper/paprika

extra flour

Mix batter ingredients, stirring well. (only use fresh beer, not stale)
Put some flour in a baggy; coat fish with flour.
Dip fish in batter, shake off excess.
Deep fry in 1" of hot oil ( I use olive oil). Fry until golden brown on one side, then turn and fry other side.

Hmmmm..... what is stale beer?  I can't imagine beer sitting long enough to go stale....  ;D

Think summer time...I am on the phone, opened a beer, set it down, forgot I opened it, got another beer....later, I stuck the opened beer in fridge to use in the beer batter later on...the beer lost its fizzle. Ruined the beer batter...

I use pancake mix and use beer for the liquid. Makes a great batter  ;D

We just always used flour, ground up crackers, seasoned salt. And dipped the filleted fish in egg first, then the batter. Then fry.

I like them baked now. Too much oil/butter makes me wanna gag.
