zard's recipe is real similar to mine for corned beef and cabbage.   except i use bee,r water, and beef broth mixed in equal parts.

the crock pot is a great way to make it as well.  do the meat, beer, broth and water for about 3 hours, add potatoes, onions, and carrots for one hour and put the cabbage in for the last half hour.

and as for arpydave, i looove some bbq brisket.

i smoked one at home a few months ago.  i use a little bit of my bbq sauce and mix it with my rub to make a paste to coat the meat, then wash it a few times just before its done.


Yeah, I've used beer and it does give it a unique taste, but not everyone likes that so I keep the recipe to broth and water... ;)


The first time I had corned beef hash was when my Grandma made it from scratch.

It was awesome.

Then, years later, I found the stuff that comes in a can and thought I'd try it. When I opened the can, I thought it smelled like Alpo.

After I cooked it up, I decided that I was right, it WAS Alpo. But then again, I don't think the dog even ate it. ;)

that stuff is garbage.

i tried a few different canned varieties, and they were all the same.

the only way to have that tasty hashy deliciousness is to make it yourself or go to a breakfast spot.

(i like mine with onions in it)

My grandfather was a commercial fisherman on Lake Superior...

the fish business wasn't always good...

but we always ate good :D :D :D

Yes it is...

and I've eaten it just about every way there is to fix it...

smoked is hard to beat ;) ;) ;)

i used to go camping in munising every summer and we would feast on whitefish from the indians all week.

my favorite way to make it (i may have posted this before) was to fillet it (leave the scales on) and just wrap it in foil with butter lemons and pepper.

then you just set it in your campfire for ten minutes and you're good to go.

nothing better than campfire cooking.

I was just wondering how to make corned beef.  I bought a corned beef brisket at Meijer.  I put mine in the crockpot with the seasoning and some beer and beef stock.  Does anyone have any other suggestions?  Thank you.

I usually do mine in a large soup pot on the stove for hours.  But, the crockpot one sounds good and easy.  How much beer/water or just water did you use with the seasoning packet?  Also, how long did you leave it in the crockpot?

I put one can of beer in it.  I didn't use water.  I used beef stock.  I buy the one in the paper box, Kitchen Basics, I think.  You get it in the soup aisle.  I put in enough to cover the brisket.  I left mine in overnight on the keep warm setting b/c it was frozen.  Then in the morning, I turned it up to low and let it simmer all day.  It shreaded apart perfectly.  You could use it for sandwiches.

Guinness beer is best with corned beef.  I try to keep it as Irish as possible. Bailey's custard for desert.

I don't like the corned beef briskets in all that solution of nitrates..... You are in a unique area.. go to Hamtramick and get corned beef brisket from the Kosher Butcher on Conant..  you will really taste the difference!!!!!

I am a firm believer in Garlic Garlic and more garlic.. poke holes throughout your brisket and stuff it with chopped garlic... I also like cooking it in beer...  cheap beer works best.. Black Label was what I used when I lived in Michigan... I soaked the brisket with the Garlic and Beer overnight... and cook the hell out of it...

When done.. take your brisket out and be sure to slice it with a good knife... against the grain... This is very important!!!!  That way it is tender and melts in your mouth!!!!!

I am going to Zengermans in Ann Arbor tomorrow to get Kosher Salami (our Kosher butcher in Tampa went out of business) .. I know what I want to eat while I am there.. !!!!
